Waldorf Chocolate Cake
(mayonnaise cake)

2 cups sifted flour
1 1/2 tsp soda
1 1/2 tsp baking powder
1 cup sugar
1/4 cup unsweetened powdered cocoa
1 cup cold water
2 tsp vanilla
1 cup Miracle Whip salad dressing

Method:

Mix :flour, soda, baking powder, sugar and cocoa. 

In a separate bowl mix the water, vanilla and salad dressing.  Add this to the dry ingredients above. Hand mix gently --don't over beat or cake will be tough. 

Bake in a 8x8 or 9x9 or 7x10 pan at 350 for 35 minutes

Be sure cake is completely cool before frosting.

Frosting

1 cup sugar
1/4 cup unsweetened powdered cocoa
1/4 cup whole milk
1/4 cup margarine
2 teaspoons of pure vanilla

In a pan over high heat mix: the sugar, cocoa, milk, and margarine.  Bring to a rolling boil (important) for 2 minutes exactly (this will boil off the sugar but not carmelize).

Remove from heat and stir constantly while it cools.   As soon as you can see it beginning to thicken (may take about 5 minutes or more) add 2 teaspoons of pure vanilla (the alcohol will cook off).  continue beating until it thickens--then spread over the top of the cake and down sides--it will just be dripping rather than coated.  Let sit for about 1/2 for frosting to set up and then eat--yum, yum.

The frosting is tricky and takes a few times to get it right--but once you get down the stages and when to put it on the cake--it is fabulous!!
