Quick Chocolate Cake

2 oz. Baking chocolate, unsweetened
1 cup water
½ cup shortening
2 cups sugar
½ tsp. Salt
2 cups flour
1 ½ tsp. Baking soda
½ cup sour milk (make by adding 1 Tbsp. Vinegar to the milk and let sit amoment or two)
2 eggs, beaten

Method:

Heat first 3 ingredients till chocolate melts completely. Remove from heat and place in mixing bowl. Add remaining ingredients in order given. Beat for 2 minutes with an electric mixer on medium speed. Batter will be thin, DO NOT ADD MORE FLOUR!!! Pour into either a 9"X13" pan or two 9" round cake pans and bake at 350º for 30 to 35 minutes, till top springs back when touched lightly. Let cool and frost with Clever Judy Frosting.

Clever Judy Frosting

1 cup sifted confectioner's sugar
1 egg or two egg yolks
¼ cup milk
½ tsp. Vanilla
2-4 squares (oz.) baking chocolate (unsweetened ), melted (do NOT use the premelted chocolate for this )
1 Tbsp. Soft butter

Combine all ingredients in order given in a medium size bowl. Place this bowl into a larger bowl filled with ice or ice water and beat with an electric mixer on medium speed until it reaches desired consistency. Frosts 2 9" layers
